Of Food & Spontaneity...

2 of my favorite things! Halfway through a hectic Monday my romantic and thoughtful boyfriend presented to me the idea of taking a picnic out to Burfoot Park and enjoying some food & wine outside. His brilliant ideas, supplemented by a quick trip to Trader Joe's and about 45 minutes in the kitchen yielded the following picnic components:

Pesto Pasta salad...
Bowtie pasta, boiled & chilled, tossed with homemade pesto (roughly processed basil, cashews, parmesan & olive oil), red peppers, kalamata olives & olive oil...

and a vague replica of a Bread Peddler classic sandwich...Pugliese bread toasted with olive oil & balsamic vinegar, spread with herb goat cheese & roma tomato slices, baked until done, topped with fresh basil and covered with the lid...

Add a blanket and a bottle of cheap red wine...et Voila!
